Adaptogenic Cacao Protein Bars


Ingredients

2 overripe bananas

1 cup softened coconut butter

1/4 cup vanilla protein powder

1/4 cup tahini

4 tablespoons pure maple syrup or honey

1 teaspoon pure vanilla extract

1 - 2 tablespoons Alcami Elements cacao powder

140g melted dark chocolate

20g puffed quinoa

Instructions

  1. Blend the bananas, coconut butter, protein powder, tahini, maple syrup or honey, vanilla extract, and Alcami cacao powder in a food processor until smooth.

  2. Spread the mixture evenly into an 8x8 pan lined with parchment paper.

  3. Freeze for 2 hours.

  4. While the base is freezing, prepare the topping. Melt 140g of dark chocolate and mix in 20g of puffed quinoa.

  5. Once the base is frozen, spread the chocolate and quinoa mixture evenly over the top.

  6. Freeze again for 30 minutes.

  7. Cut into bars.
