Ingredients:
2 cups of lukewarm water
1 cup of coconut shreds
A few drops of vanilla extract
1 medjool date
1 heaping teaspoon matcha powder
2 shots of espresso
1 teaspoon of honey

Instructions:

In a blender, combine the lukewarm water, coconut shreds, vanilla extract, and date. Blend on high until smooth.

Pour the mixture through a nut milk bag or fine mesh strainer into a bowl. Squeeze well to extract all the coconut milk. Transfer to a glass bottle or jar and refrigerate if not using immediately.

In a blender or small bowl, mix about ¾ cup of the homemade coconut milk with the matcha powder until fully combined and smooth.

In a tall glass, add the matcha mixture, two shots of espresso, honey, and a handful of ice.
