ALCAMI HEALTHY POUND CAKE RECIPE

HEALTHY POUND CAKE RECIPE

Ingredients:
 
1 cup almond flour
4 eggs (preferably pasture-raised)
1/2 cup coconut sugar
2 tablespoons vanilla extract
1 teaspoon baking powder
4 tablespoons Alcami (your preferred Alcami blend)
2 tablespoons Greek yogurt (or any preferred yogurt)
1 tablespoon butter (preferably grass-fed), for greasing the baking pan
 
Instructions:
 
  • Preheat your oven to 350°F (175°C).
    Grease a standard-sized loaf pan with the tablespoon of butter.
  • In a mixing bowl, combine the almond flour, eggs, coconut sugar, vanilla extract, baking powder, Alcami, and Greek yogurt.
  • Whisk the ingredients together lightly for about one minute until well combined.
  • Pour the batter into the greased loaf pan, spreading it evenly.
  • Bake in the preheated oven for 20 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the pound cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
